Carrot Cake1 cup cooking oil Preheat oven to 350 degrees. Beat cooking oil and sugar together in mixing bowl. Beat in eggs. Stir in carrot. Add remaining ingredients. Fold in to moisten. Spread in greased 9 x 13" pan. Bake in oven until an inserted wooden pick comes out clean, about 45 minutes. Spread with cream cheese icing when cool. Cream Cheese Icing8 oz. Cream cheese, softened Put all ingredients into mixing bowl. Beat slowly at first to combine then beat at medium speed until light and fluffy. More or less icing sugar may be added as desired. Makes about 3 ½ cups. |
